The Edinburgh Gin Distillery at The Arches is a one-of-a-kind destination that marries Edinburgh’s rich history with the modern artistry of gin making. Visitors can enjoy four distinct experiences, including gin tastings, cocktail classes, and even a bespoke gin-making opportunity. Highlights include the breathtaking new space with historic exposed brickwork, floor-to-ceiling windows, a roof terrace, and two striking 2,000L copper stills – Annie and Lina – designed to celebrate the craftsmanship and wonder of gin-making.
We love the architecture of the distillery, can you tell us a little about the history of the location of the new Edinburgh Gin Distillery?
The distillery is located within Edinburgh’s historic Arches dating back to 1875, which sit on the site of the former Trinity Church, home of one of the first Physic Gardens in Edinburgh – the predecessor to the Royal Botanical Gardens of Edinburgh. This area is deeply connected to Edinburgh’s history of botanical exploration, making it the perfect home for Edinburgh Gin. The preserved architectural features, such as the historic arches and exposed brickwork, create a unique blend of heritage and modernity. The setting pays homage to Edinburgh’s role in pioneering both science and spirit-making.

The Classic Tour & Tasting lets guests dive into the flavours and aromas of Edinburgh Gin’s botanicals, while the Gin Making Experience provides hands-on creativity for crafting a bespoke gin. Each experience, guided by expert Distillery Ambassadors, offers a sensory journey through gin’s history, production, and tasting, ensuring a memorable and educational adventure in the heart of Edinburgh. Sustainability is such a hot topic right now. What sustainable practices does the Edinburgh Gin Distillery champion, and why is this so important?
Sustainability is at the core of Edinburgh Gin. The distillery runs entirely on 100% renewable electricity and is operationally carbon neutral. We have also introduced eco-conscious packaging, featuring 49% recycled glass, fully recyclable labels, and the removal of all secondary packaging across our core range. These practices are essential in reducing the environmental impact of production while meeting the growing consumer demand for sustainable, ethical brands. Our approach reflects our commitment to protecting the planet for future generations while continuing to produce high-quality spirits.
